Default Caesar Salad

Some of us were reminiscing about the good old days when you ordered a Caesar salad and the Maitre d would come to your table with a large wooden bowl, fresh ingredients (including eggs) and make it table side. I know that doesn't happen in TV but does anyone know where it might still be practiced relatively locally?

Vic's Embers used to do it. I think it has to do with raw eggs mixed in the dressing and the fact that the dressing is all fat and has more salt than a bag of potato chips. Many people prefer a light dressing on the side.

I miss the authentic ceaser salad as well. We usually had anchovies included to substitute for the needed salt flavor.

In my opinion it was overkill precaution to eliminate the egg content.

The real salad uses a coddled egg, (slightly poached to raise the temp) this reduces the chance of egg problems.

Great place for a super extravegant affair (no, not that kind of affair). You will easily drop $200 for two people.

However, best Caesar Salad I ever had was in Las Vegas at the Luxor Hotel. It was served in the Isis Restaurant. I bet they have changed the restaurant name!

Thanks, we get to Tampa often to visit friends, will try Berns. The Four Seasons in NY does a great table side Ceasar but now that's just a bit too far to drive.

Cesar salad one of my favorites with raw egg and anchovies ground to a paste make it home peridically

Pasteurized eggs can be used also, for the same purpose.
