Default Favorite lunch "back in the day"

PEPPERS & EGGS WAS A POPULAR LUNCH BOX OR LUNCH BAG STAPLE "BACK IN THE DAY" WHEN WIVES PACKED THEIR HUSBAND'S OR KID'S LUNCHES.......FOR WORK OR SCHOOL.

Italian Peppers and Eggs Sandwich


Ingredients: Serves 2

2 tablespoons olive oil
1 garlic clove, finely minced
1/2 teaspoon crushed red pepper flakes
1 cup onion,finely chopped
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced (or just one cup of green peppers will do) (May be cut in long thin slices rather than diced)
4 eggs, beaten
Salt & freshly ground black pepper
1 12-inch loaf of crusty Italian bread, or 2 6-inch rolls

Italian Peppers and Eggs Recipe
Heat olive oil in a skillet over medium heat.
Add the minced garlic and sauté for 1-2 minutes.
Add the onions and peppers and cook for 10-15 minutes until soft.
Add the eggs, salt and pepper to the skillet.
Stir to mix well, then reduce heat to low.
Cook until the eggs are set, stirring occasionally, but do not scramble.
Cut the loaf of bread lengthwise without cutting all the way through.
Place the eggs on the bread, and slice the loaf in half.


Wrap each sandwich is aluminum foil, and allow to sit for 10-12 minutes. This "resting time" permits the flavors to meld. It also allows the hot eggs to soften the crusty bread.
