If we grille steaks/chops, I'm certainly not going to spend hours that afternoon making dinner salad or some kind of separate entree for our vegetarian/vegan guests.

It is very uncomfortable inviting people who refuse to eat what you're serving! And it's rude at wedding banquets to have vegetarian/vegan guests loudly stating disgust over the meal the bride's parents have spent a fortune to provide their guests.
I guess I must be the exception. Whenever I invite guests over for a meal, I always ask in advance if there is something they can not eat or prefer not to eat. Then, I can make a meal everyone is happy with and we can concentrate on a good time vs. discussing food issues. I can't tell you how many times I have been thanked for asking the question. I didn't realize it was such a big deal. I thought it was just common courtesy.
