I do that too, and there is another way to accommodate everyone, also. Have a variety of dishes. You are not going to only throw a piece of meat on the table when having guests over anyway, so come up with some side dishes that can accommodate vegetarians and people who eat gluten free. It's not hard. We have two kinds of vegetarians in our little family of 8. Christmas dinner is a variety.
But one thing I learned is that the omnivores will happily over-chow down on the vegetarian dishes, so make plenty of food! The polenta-tomato-mozzarella pie I made for the vegetarians one Christmas almost didn't make it around the table to them. Piggy little omnivores...
