I understand how you feel, but my theory is that a lot of bacteria is growing when things are sitting around in coolers and what happens to the meat that didn't sell today?
I will take my chance on the processes of fine and constant refrigeration like Publix et al. Red meat is supposed to heighten your risk of strokes anyway, and I should listen to THAT warning.
We also have global warming and exploding refrigerators, not to mention sinkholes and lightning strikes. It is enough to make you drink.
