Since they obviously had the chicken salad already made (as evidenced by the chicken salad special), and since it most likely costs less than tuna salad anyway....your request sounds more than reasonable.
All they had to do was to reach into the chicken salad bowl and
spread it over the croissant, instead using the tuna salad bowl.
My guess is that you came across a server who was either lazy, or wasn't bright enough to understand how easy your request would have been to fill.
Too bad you didn't call a manager over, as even a poor manager should have been able to quickly realize how easy your order would be to fulfill...even if he tried to say that the chicken salad was more expensive than the tuna salad (which it obviously isn't) and quoted an up-charge.
