Well, my father was born in 1898 and starting at an early age worked in groceries for many years. He told me what he saw butchers put into hot dogs. Starting at the front of the pig they put in the snout, lips, gums, eyes and eyelids, ears...well you get the idea. They also put in parts from the other end of the pig starting with the tail... Then they would sweep up the "meat" scraps from the floor and add that. Now I am fairly certain that processing plants these days and indeed for some time have run a cleaner operation than he observed back in the day. Nonetheless much of the ingredients even today surely still consist of fleshy parts of an animal that can not be sold as cuts of meat such as loin, chops and so on.
