A tamale is a dough (masa) made of corn. The same masa that chips and tortillas are made of. It's filled with finely ground chicken, beef, pork, turkey or venison that is flavored with cumin, chili powder and some other spices. They are then wrapped in a corn husk individually and steamed. They can be incredibly delicious or awful. Steamed too long and they become dry and crumbly. Christmas is a customary time to have them. We used to order them and then go to the ladies back door to pick them up.
