I’d be very interested to know about the sofrito as I know NOTHING about it. My dad was a plumber and one day he did a job at the home of a Puerto Rican family. The lady of the home was, I think, preparing a sofrito for the evening meal, redolent of nothing but garlic. My father hated garlic; I wanted to stay for supper!
