Typically your ceilings are already white. Before painting the walls, do a LIGHT scraping to knock off any "paint boogers" that will catch the new paint and cause drips.
Painters will typically charge you less if the home is empty...much easier to paint that way.
Note that the original paint is usually flat, and is considered a mid grade builder quality paint. Many folks elect to "upgrade" to a higher grade and add color to what some consider a blank canvas.
Take a good look at the walls, (as well as many other things) for areas/issues you may not be happy with. Many items are only taken care of within the 1st 30 days. Thus the importance of your 30 day check list. This is important and it does not matter that you will not be there until months later.
There is a system, a process, a timeline that does not allow for individual unique circumstances.
