Japanese and sushi restaurants have vegan options because they specialize in tofu dishes. You just have to read the descriptions carefully and ask if you're unsure of the contents of the sauces. Make sure the server understands what "no egg" means.

Plenty of Italian and other Mediterranean dishes made with eggplant, just can't have cheese on them, and the red sauce has to be a straight tomato marinara. If they say it comes with gravy, ask to have marinara instead. Gravy is marinara with meat added (even if they remove the meat, it's cooked with it).
