Might you be able to take that ricotta that you bought and strain it through cheesecloth in a weighted container in the fridge overnite to remove the liquid?

I have used basket cheese in some of my Easter cooking - maybe you could use that if you can find it...or make your own if you can find rennet...How to Make Basket Cheese | Our Everyday Life
