I used to rough chop by hand because we mostly had breast meat left over--both with chicken and turkey. But as my husband got older he had trouble with many "dry" foods. So I started fine-chopping in the food processor. I can throw in the celery and carrot (yes, I put this in my chicken salad). I think it depends on your preference and possibly your wife's ability to deal with chewing and swallowing certain foods. With the processor, you can process less time for less fine chop.
