The death certificates go from hospital to county to state, this takes time. Each death certificate has date of actual death on it. Some days the State receives large batches of them with actual dates going back days, weeks or months. To spot actual trends, the deaths need to be put in the column of the date they actually happened, not the date they were reported. Look at the 2 graphs I posted in OP and you can see the difference.
