Our entire Christmas dinner was gluten free as our son requires it. This included roasted pork loin, rice, roasted potatoes with beets, squash, apple pie, pumpkin pie, and everything was made from scratch. In our area Wegmans has an extensive area with all gluten free foods. Let me know what you need and I will FedEx you a care package. Almost everything in the produce section of any store is safe, meats, rice, eggs, are all OK, and there are substitutes for most everything else. Pie crust was a challenge, but after a couple trys got that also. Not as flaky as normal but OK. You can thicken things with corn starch, olive oil and real butter are fine, and you can actually make pizza. There are several gluten web sites with lots of great information. That way when you read a label and it says contains x&*y3m%-), you can look it up to see if it contains any wheat product or wheat type by products.
