I don't agree. Restaurants have indoor seating for individual parties (one party per table, whether one person or 10 people), something a "food truck-esque" place wouldn't have. I imagine more on the order of a few long communal picnic tables and benches where anyone can sit at them right in the center of the hall, surrounded by these food booths or bars or niches. It'd be noisy and busy, not suitable for "relaxing" but more for the moviegoers to grab a bite on their way to or from the movie, or for dancers in the square to grab a dog and a soda inbetween sets of their favorite band, etc.
