I haven't seen it off by more than a few minutes, which was the result of someone going VERY slowly and a bunch of us all just trying to go close to 20mph behind the slow one (maybe going around 9mph? if that - daydreamer/sightseer or something). So it was a back-up of cart traffic for awhile, eventually the slow one turned off the path and we were able to get back to a normal speed again.
I go from Orange Blossom to Southern Trace a few times every month, to Colony once a month, and to Sumter several times every month. I even went to Rohan a couple of times, total. And I have never been able to go more than a few minutes faster than the GPS claimed it would take.
