It is, or was, shown on the menu. That is the grade below choice. I'm not aware of any place selling meat of that low quality grade.

The USDA grades beef in the packing plants (I've seen it done in the plant). The three most common for restaurant or butcher shop use are Select, Choice and Prime. Aging has nothing to do with the grading by the inspector, if it is aged that would be done either by the distributor or the end user. IMO aging has a large amount to do with the quality of beef consumers use. Unfortunately many end users don't have the space or cash flow to age beef to 21-28 days.
