I had a spike in my water bill gradually each month, nothing like yours. Turns out a plastic PVC pipe inside the wall in the spare bathroom had a hairline crack it that was slowly, over the years, leaking. It took a couple of years of slow leaking until one day I walked out of the bathroom and I stepped on a tiny wet spot that had finally surfaced. Turns out the drywall was saturated about 3 foot up the wall. Had to rip 3 foot of drywall out and dry everything out. It seems that is quite common here with cracks in the PVC. Was told by the insurance company some have even had to have all internal pipes replaced.
