has nothing to do with that, we have made both for years with Florida water with no problems. The problem is actually tourists and birds (as in snow) aside from places like publix is in a rush and could care less, they have the ovens to do it but they don't proof it like it needs to plus in talking to one of the bakery managers they stated that (best I recall) "the old people like it softer" but also offered if I placed a side order that he would personally make it harder crust etc but I'd have to also wait until the middle of the week on a "non check week"
