If you have the new floor installed over the existing floor you could have any or all of these problems:
1. You may not be able to pull your refrigerator out and if you do it may damage the new floor, you would need to have the refrigerator pulled out and the new floor installed, then placed back. Check vertical clearance.
2. Same goes for the stove, except it will now be higher than the surrounding counter top.
3. Under the heading been there done that be very careful about the dishwasher, a previous house had rather thick (3/8 inch) flooring installed over the existing flooring, and when the dishwasher failed, I could NOT get the dishwasher out without raising the counter top, check your clearances.
Bottom line I strongly suggest removing the existing floor, and have the new floor installed UNDER all of the above equipment.
