Inside we handle it the same way we did when we lived up north (at least, when we had central air). Summers = 78 during the day, 76 at night. Cold weather: 68 or 70 during the day, 65 at bedtime.
The difference between inside and outside is much more profound for us down here in the summer than it is in the winter. Summertime it's instant sweat for me outside. The humidity really bothers me. Wintertime in Florida is a cakewalk. Sweat shirt, thermal leggings or bluejeans, maybe my hoodie and if it's under 50 my winter coat's inner shell (the outer shell is thinner and water-resistant), it's all good.
We always have a thin blanket on the bed, I can't sleep without one. Wintertime is when we put the quilt on, but beloved spouse always pushes his half of it to my side.
