That said, I am not a chef trained in Mexican cuisine so I bow to your superior expertise. My opinion was formed growing in and around the barrios of East Los Angeles.

I grew up in Southern California and seems to me you have the superior expertise. I also worked for a company that made Taco Bell’s hot sauce which is definitely that a hot sauce the main difference is the amount of vinegar hot sauces much more vinegary than a taco sauce.
