Nest Learning thermostats don't work that way. The cheaper nests will, sorta, both are a pita when it comes to holding a temp.
The only way to do it on a Nest learning is to disable a bunch of features and run a fixed schedule. It's stupid that you can't just twist to a temp, click hold. It's also bad if you're living in someone else's house then you're at the mercy of a stupid thermostat.
