We always went to Alfie's- just to get out of The Villages & we like to support locally owned businesses. Their prime rib can be outrageous, or it can be so- so. We've actually found Outback's prime rib to be consistently delicious.

For Christmas, I cooked prime rib for 90 for our church, without ever having cooked it. I got the recipe from Pepe, the original chef at now-closed Bourbon St. Could not be easier- or more delicious!~~

1. Buy prime rib (or standing rib roast if you want the bones)- SECRET: Allow beef to reach room temp. before cooking so it cooks uniformly.

2. Buy "Montreal" or "Canadian" Dry Rub

3. Rub spice generously on beef, place in pan,fat dies up, ribs down cover with foil. Cook at 425 for about 20 minutes, then lower to 300 & cook around 8 minutes a pound!

4. Remove when very red (120 degrees if you use a thermometer) & allow to rest to allow juices to flow back for at least ten minutes- beef will continue to cook, so make sure you take it out of oven before it looks rare.

Works great for regular steaks too!

I was always a total klutz with beef, but have found this to be foolproof, quick and delicious.
