I cannot vouch for its scenic qualities, but the most logical non-Interstate routing would be US301 from Oxford, FL, to Jesup, GA, where you will join US25. Follow US25/US301 to Statesboro, GA. Then, switch to US25 from Statesboro all the way to Asheville.
I'm headed to Asheville, too. Joining my friend in Nashville, TN, from where we'll drive to Asheville. Arriving 08/01, departing 08/04.
