My understanding of the difference between Nest and Ring is how soon the recording starts when someone is nearby and that the Nest does a better job. Ring vs. Nest (2022 Comparison)

I have the NEST doorbell as well as a NEST outdoor camera in my driveway and they are both recording 24/7 and never have to "start." They do NOTIFY if that is what you mean when a person is seen if they don't recognize them but the camera records 24/7 for 30 days and the oldest rolls off the end. I do notice the doorbell takes a few seconds after someone rings it so on occasion the person can be gone before you can speak with him if you are away from home where you have to deal with cellular service latency. If you just watch the video remotely it's almost realtime.
