If you are looking for Chicago, NYC, Vancouver, etc. etc. authentic, not grease, not corn starch, and not "Americanized", even luck won't help you. Even much better (authentic) where we are from in South East Florida. Probably just too "rural" to be able to support such restaurants... but branch out a bit and you can find at least "decent" replicas to big city establishments. I try to keep in mind that restaurants sell what people WANT, and here they definitely want their "ethnic" cuisines HEAVILY "Americanized". That's the way it just is... got to follow the demand of course.
