This is a good idea, although I have turned off a few push-pull valves on my toilets without a leak problem. If you read the installation manual for the new refrigerator, it is very likely that you can use the existing supply piping from the wall to connect the water to the new refrigerator. If so, it is very easy to do, and will save you the cost to replace the valve. Note that if you have sheet vinyl flooring or laminate flooring in the kitchen, I recommend using a sheet of plexiglass to protect the floor when you pull out the refrigerator.
