In my younger years I had the pleasure of working in a family operated cheese factory in Wisconsin.
At Christmas time they would bust out the 5 year aged Brick Cheese from the cooler vaults.
Special seasoned employees were only allowed to slice, weigh, and wrap those Brick cheese blocks that were designated for special customers only for the holidays.

We, as employees were given small samples of this Aged Brick cheese if we wanted them, which I did.
The most elegant, creamy, delectable cheese one could ask for...not to mention it stunk to high heaven and
back !!
I would cherish my sample and slice it thin for the top of hamburgers and on top of a finished grilled ribeye.
Nothing like it in this world !

I don't even see real Aged Brick cheese anymore...sad.
