Prime rib and USDA Prime beef are two different things. USDA Prime is a quality grade of beef, but a prime rib is a certain cut of meat on the cow. Apple and oranges. On the Publix.com website, they sell two different grades of "standing rib roast", USDA Choice and USDA Prime. The USDA Prime beef will be a more tender and higher quality grade of beef than USDA Choice. It will also be more expensive.
