Brother in law was in the wholesale fish business. Other than a fishing boat out for the day and selling immediately on its return, there is almost no such thing as fresh fish anymore.
Boats stay out for days or more at a time and immediately freeze and often filet their catch.
What we get can be called fresh frozen. The one major exception I can think of is farm raised fish.
