Not all routers expose that level of configuration.
Not all users will want to muck with that level of configuration.
If you disable the router’s ability to automatically choose a channel your neighbor may choose the same channel tomorrow.
If it doesn’t matter that your neighbor chooses the same channel then there is no need to force a channel in the first place.
The solution to the problem was with the device, not the router.
