Nothing like resurrecting an old forum when you're a newbie like me! We're moving down next month, so now I'm really snooping away at the site.

To moisten my meatloaf, I've started adding chopped veggies to the mix: like zucchini and sweet red pepper, chopped onion, mushrooms. It adds moisture, texture and great flavor not to mention the health benefits!

My original recipe would be "Tortilla Rollups" There's various versions out there but my personal creation is:
1 lb cream cheese (or neuftchatel to keep the calories down)
about 1 cup Pace picante
about 1/2 C finely chopped cilantro
1 package fresh tortillas
Mix cream cheese, picante (I use hot) and cilantro together. Add enough picante until it's a nice salmon color and a nice creamy consistency.
Spread about 1/8 C mixture evenly over the tortillas. I leave one tortilla seperate in case there's too much goop on the other torts, I'll take those scrapings and put them on the last tort. roll them up, slice at an angle about 1/2" wide. Is a great appetizer.
If you put the rollups in the fridge 1st before slicing, they will firm up to make slicing easier. Cover w plastic wrap or they will dry out. Enjoy!
