Comfort food to me is those special meals Mom made so well - back when "from scratch" was all there was. Since she was from Mississippi, it was southern fried chicken, fried halfway, then add water to steam it with the lid on. Turn the heat back up, lid off and fry to golden brown - it was the moistest chicken you ever had. Make some mashed potatoes with chicken gravy and homemade cornbread that melts in your mouth like it was the lightest cake. If this thread doesn't make us all miss our moms, I guess you didn't like yours very much!
