We just went thru this process in Dec. and moved in Feb. 17th. I do not think they would allow you to close on a home with no counter tops. If you are in doubt on the granite after you see it. You may want to go with the least expensive laminite top, and change that to granite, when you are ready.
Everything is a package, and example is if you pick a certain ceramic tile, then that dictates the color of the rug, in the bedrooms. The model you go into may have granite in the Kitchen, bathroom and Laundry room. If you choose that particular granite, that is what you get in your house.
The model home centers are built, and change frequently. The model, designers and cottage homes, that were used in Dec. are now for sale. I am sure a new center will open soon. Hope this helps, it is a very confusing process. Take pictures and have a back up choice on as much as you can.
