I consider myself a bagel snob (when I was younger I managed the best Jewish deli/bagel restaurant in Miami for many years) and Brooklyn Water Bagels are some of the best I have had in many years.

FYI-"Lox" is a smoked salmon, but it comes from the belly portion of the fish and is heavily brined, so it is usually very salty. "Nova" is sliced from the side of the filet and is not heavily brined, so it is less salty. These terms are frequently used interchangeably, but they are actually different types of smoked salmon--having very different tastes.

Funny story: when I used to work in the deli, I became an expert at slicing nova and lox. Most of our customers requested that it be sliced paper thin (back in the 80s our deli charged $26/pound for sliced nova/lox so it would go further if it was sliced really thin). I would sometimes be stuck slicing salmon for hours at a time because our customers always requested me to slice it. At the end of the day, I would come home smelling like smoked fish. It didn't matter how much I showered, I just couldn't seem to get rid of that salmon smell. When I finally changed careers and left the restaurant, I couldn't bring myself to even THINK about eating nova or lox. It took me almost 20 years to be able to order/buy it again, but nowadays I really enjoy a great bagel with nova.
