Great Story Cappy. It was always a special treat to be able to go to Petak's Glatt Kosher Deli, in Fairlawn New Jersey, and have the Nova Salmon cut really thin like you describe. There's nothing like fresh sliced Nova on a perfect bagel with a "schmear". (Couldn't resist picking up a little smoked whitefish for an afternoon snack with crackers while there.)
