First of all, you bought the RIGHT product. Walkerswood is all we use. It was recommended by a Jamaican friend of mine.
Buy some decent size legs and thighs. Make some fairly deep slashes across both sides of the meat. Rub the seasoning on and into the meat, 3/4 teaspoon, per piece using surgical rubber gloves and DON'T rub your eyes. This amount will be reasonably spicey.
Bake in the oven at 275-300 until the internal temp is around 140 degrees. Remove from the oven and finish on the grill until it's browned and around 160-170 degrees. The entire cooking process can be done on the grill but it tends to flare unless it's done on indirect heat.
Serve it with some cold Jamaican rum punch. We asked our bartender friend in Jamaica why our rum punch didn't taste like his...he said "ya mon, don't forget to add a splash of bitters" He was right!
