BBQ is cooking with indirect heat using wood, charcoal or some other heat source.
When you cook directly over charcoal it is grilling.
Ribs for instance take 3-4 hours to BBQ with the temp in the cooking area 200-225. Pork butt(shoulder) takes 6-8 hours, Beef brisket may take 8-12 hours. The flavor of the meat may be changed by the different woods used to smoke it, pork goes well with hickory, apple & cherry wood, I like mesquite with beef. Chicken & turkey may be BBQ'd or grilled but low and slow is best.
Burgers, hot dogs and steaks are grilled over direct heat and take much less time
