1) It is not common practice for management to keep any portion of a gratuity, charge of cash. Ocassionally charge tips are added to the servers paycheck, depending how an operator chooses to reconcile.

2) In the state of Florida, servers are required to report, and pay taxes on 8% of their total sales and are required to report ALL credit card tips(paper trail)

3) 18% is the appropriate minimum service charge/gratuity, 25% is the going rate for good service.

4) Tipping less than 18% will ensure you never get the maximum level of attention you deserve at that establishment... Servers never forget a poor tip, they talk among themselves, and are quick to point poor tippers out to their comrads.

5) Restaurant managers/operators have very little compassion or sympathy for poor tippers, don't look for resolve there, especially if you have just stiffed one of his/her staff members.
