Thought I'd add a sideline to my original post...
I purchased my knives at restaurant supply store in upstate NY many years ago following a cooking demonstration led by a young perky cook who was a spokesperson for a local supermarket chain. Sadly the store is now out of business but the young cook certainaly isn't...the cook was our own Rachel Ray!
