Simply Recipe's Oatmeal
Soda Bread isn't vegan, but is easily made that way by using egg replacer, Earth Balance in place of the butter, and substituting vegan buttermilk for the dairy variety. To make vegan buttermilk, for each cup required, place 1 tablespoon lemon juice or vinegar in a glass measuring cup. Add in soy milk to equal 1 cup. Stir and let stand for 10 minutes.
