I just think maybe people will think twice about asking for extra's that are all added cost to the operations. And, I would venture to guess, a lot of the time, the extra's aren't even used.

I worked for several yrs as a server here in The Villages. We were instructed by management to serve 1 sour cream or 1 salad dressing etc any additional would be a 50 cent charge. Many customers ask for extra just in case they might need it and once that item leaves the kitchen & if it is not used it has to be thrown out. Those items day after day customer after customer add up. Most restaurants charge for extra items as such. Same applies for restaurants charging a split plate fee. It isn't necessarily due to tough times it is due to being in business and maintaining cost effective strategies.
