EAT YOUR VEGGIES: In his efforts to promote a plant-based diet, the former firefighter and former triathlete Rip Esselstyn doesn’t lack for enthusiasm —
the chapters in his new book, “My Beef With Meat” (at No. 16 on the advice, how-to and miscellaneous list), include “Vitamin B12: Not a Problem!,” “Chocolate! You Bet!” and “Veggies Give Verve to Your Vulva.”
(Presumably the exclamation point in the last instance is implied.)
Esselstyn recommends a recipe for “handstand burgers,” a spiced bean concoction that doesn’t sound bad so long as you’re expecting falafel instead of chopped sirloin.
Why “handstand”? The recipe comes from Esselstyn’s friend Jeff Novick, a “dynamic, knowledgeable and cuddly man,” Esselstyn writes, “who can do perfect handstands.”
