There's a myth that it's the water that makes the NYC pizza different. I call it a myth because while there's plenty of water in NYC, it's not anything you'd want to drink. The NYC reservoirs are in Westchester and Putnam counties north of NYC and east of the Hudson River as well as in Sullivan, Delaware, Ulster and Schoharie and maybe other counties, all west of the Hudson River and as much as 150 miles north of NYC. As you can see, NYC water comes from many places. To credit the water in NYC for the taste of the pizza ignores that fact that great pizza can be found in suburban NY in New Jersey, Connecticut, Rockland and Orange and Westchester counties and even on Long Island with each of these localities having their own water supply.
