Well, here's my report on T Weston's, with apologies to Redwich.

My wife can eat no fat and I can eat no lean. She had the baby back ribs, I had the St. Louis style ribs. There is no entree sized sampler platter.

Baby backs were tender, moist and pretty meaty. Kind of mild taste, not very smokey in our judgement. Seemed rather pricey for BBQ. She can only eat a half rack, but it does not come that way.

St. Louis were quite fatty at the thick end, but overall too dry and tough on the bone. I had trouble both cutting and chewing. Served with dry rub and sauce on the side. Tasted pretty good, sauce not needed for me, kind of overpowering if it's not cooked on. The half rack was also pricey, and a full rack downright expensive. I just stopped eating after about 3/4 of my half rack.

A courteous server asked how we liked the meal, and I politely told her about the dryness. The owner (Aileen?) came over to check on my problem, and the chef (Tracey?) brought out a plate full of fresh ribs for me to taste or take home. I tried one, which was somewhat more moist than those on my serving. However I declined to take them home, because they would just go to waste, but thanked the owner for the offer. I guess they think I just don't know much about ribs.

We don't eat lunch out, so would not get to try all the items that the OP listed. I would like to go back to try the pulled pork, or the smoked prime rib, but somehow I don't think we will get around to it.
