Very easy to make and one of my comfort foods.

I can of salmon, juice and all...dump into bowl.

Add half a sleeve of Ritz crackers, smooshed, half a medium onion chopped fine and one egg. Mix together with hands and allow to sit in frig for an hour or so for flavors to blend.

Make into four patties. Put a couple of tablespoons of oil in frying pan and fry your patties until a nice crispy golden brown on each side.

We like ours with a dollop of catchup and some packaged Bob Evans mashed potatoes and some salad or deli slaw if you don't like to cook..

Takes you back to a Friday night in the old neighborhood. Food for the soul.
