Default Vegetarian update 4-23-14

WARNING: I am not trying to "preach" to anyone. I have never considered myself the "general manager" of the universe. This is simply some notes on what I have chosen to do.

First of all, I should really call this the Vegan update, because that better describes what I have been doing than vegetarian. I have been on blood pressure pills for over 3 years. First I was on hydrochlorothiazide, and then I was on lisinopril. Even on the pills my bp was usually around 135/90. I discontinued my bp pills about 2 weeks ago and have been watching my bp carefully. Without the medication, my bp now averages 106/70. I am 6'1" tall and when I started eating vegan I weighed 235. I now weigh 220 and for the first time in a long time my BMI is below 30. So, while I am still at the high end of the overweight scale, I am no longer medically obese. For the last 3 years, my fasting blood sugar has been around 130. This morning it was 106. Still a bit too high for my liking, but it's coming down fast.
The amount of resources available on the internet are amazing. My loving wife has taken such good care of me for the last 42 years that I really don't have many skills in the kitchen. I have learned many easy to do vegan dishes on the internet. There are also great vegan and vegetarian options in the supermarkets frozen foods section. I particularly love Amy's Kitchen.
So far, it seems to be working for me, but I can easily see how this isn't for everyone. After all, it wasn't for me for 99% of my life. Well, time to go have a mean green juice.
