Default Peasant Style/Brooklyn Meatballs

Peasant Style Italian Meatballs
BROOKLYN MEATBALLS LIKE MY AUNTS ALL MADE


 
1 pound lean ground beef (or half pork, half beef) (some use veal, pork, beef)
1 teaspoon Italian parsley
1 teaspoon oregano
1 teaspoon basil
1 teaspoon mint
3/4 cup Progresso Italian breadcrumbs
1 slice Italian hard bread soaked in warm water
1 clove garlic, minced or 1-2 teaspoons garlic powder (but fresh is better)
3 tablespoons Pecorino Romano cheese
2 eggs
1 teaspoon salt
1/4 teaspoon black pepper

Good olive oil for frying the meatballs........

Preparation :
Squeeze water out of Italian bread. (With your hands)

Mix with all of the other ingredients thoroughly.

Roll meatballs uniformly same size, between your palms. Small size.

Fry in olive oil in large frying pan. Brown evenly, by turning.

Add to gravy and simmer for last 30 minutes of gravy cooking.

Makes 10-12 servings for pasta .................
